curried

 

1.

 

Sift the flour, bicarbonate of soda and salt into a bowl.

Bind together with enough milk to form a stiff dough.

Knead lightly with your hands and transfer to a lightly

floured surface.

INGREDIENTS


250g / 8oz plain flour


1/2 teaspoon bicarbonate of soda


pinch of salt


4-5 tablespoons milk


ghee for frying


For the filling:


Beef Stew * recipe coming soon

With floured hands, divide the dough into 8 pieces and

then roll into balls, about the size of an egg. Flatten

them out and spread with a little ghee, and then pat

back to an egg shape again before flattening them

once more. Leave to stand for 30 minutes.

Heat a griddle and cook the roti until lightly browned on both sides, turning them frequently during cooking. Keep brushing them with a little ghee to prevent them sticking.

   

4.

 

Remove the roti from the griddle and place in the palm of one hand. Clap your hands together around the roti several times. You can use a cloth to prevent burning your hands. Fill the roti with the Beef stew and roll up.
