1.
Sift the flour, bicarbonate of soda and salt into a bowl. Bind together with enough milk to form a stiff dough. Knead lightly with your hands and transfer to a lightly floured surface. |

INGREDIENTS 250g / 8oz plain flour 1/2 teaspoon bicarbonate of soda pinch of salt 4-5 tablespoons milk ghee for frying For the filling: Beef Stew * recipe coming soon |

2.
With floured hands, divide the dough into 8 pieces and then roll into balls, about the size of an egg. Flatten them out and spread with a little ghee, and then pat back to an egg shape again before flattening them once more. Leave to stand for 30 minutes. |

Heat a griddle and cook the roti until lightly browned on both sides, turning them frequently during cooking. Keep brushing them with a little ghee to prevent them sticking. |

Remove the roti from the griddle and place in the palm of one hand. Clap your hands together around the roti several times. You can use a cloth to prevent burning your hands. Fill the roti with the Beef stew and roll up.
